Shaved Brussels Sprouts with Pancetta

    2 pkg (each 340 g) PC Baby Brussels Sprouts - Washed and Trimmed
    1/4 tsp (1 mL) ground each salt and freshly ground black pepper ground

Cooking Instructions

Slice sprouts finely using slicing blade of food processor. You should have 8 cups (2 L). Set aside.

2. Melt butter in large nonstick frying pan over medium heat. Cook pancetta for 4 to 5 minutes, stirring occasionally, or until lightly browned. With slotted spoon, remove pancetta from pan. Add onions, salt and pepper to pan; cook for 7 to 8 minutes, stirring occasionally, or until softened and golden. Return pancetta to pan. Stir in sprouts and 1/4 cup (50 mL) water. Increase heat to medium-high. Cook, stirring occasionally, for 6 to 8 minutes or until sprouts are tender, adding another 1/4 cup (50 mL) water if pan gets too dry.

Transfer to serving bowl.
