* 2 small navel oranges, peeled, divided
* 8 PC® Sukkari Whole Dates, pitted and roughly chopped
* 1 cup PC® 2% Plain Greek Yogurt
* 1 tbsp chopped shelled PC® Blue Menu® Unsalted California Pistachios
How do I make it?
__Step 1__
Chop 1 of the oranges; toss orange and juices with dates. Let soak 5 minutes.
__Step 2__
Divide one third of yogurt among bottoms of 2 serving cups. Divide half of the date mixture and another third of yogurt among cups. Layer with remaining date mixture and yogurt, dividing evenly.
__Step 3__
Cut remaining orange into segments or cubes and arrange over top of parfaits. Sprinkle with pistachios. Serve immediately or cover and refrigerate up to 24 hours.
